Shaken & Stirred
Here in Chico, California, fall is an especially lovely time of year. The super-hot summer days give way to cooler temps, but it’s still plenty warm out to enjoy a drink on the porch. And in our orchard, the pomegranates are ripe and beckoning….
Pomegranate Mojito
- 1/4 cup fresh mint leaves
- 1 teaspoon California Wildflower Honey
- 5 ounces light rum
- 2 ounces fresh pomegranate juice
- Club soda
- Ice cubes
- 1 lime, 1/2 cut into thin round slices
- Fresh pomegranate seeds
Muddle the mint, honey and two lime slices in the bottom of a cocktail shaker. Add pomegranate juice, juice from ½ lime, white rum, and shake vigorously. Pour over ice in a cocktail glass and top with club soda. Garnish with lime slice, mint leaves, and pomegranate seeds.
